Family Favorite Lasagna


My mom made this recipe when I was growing up. I always loved it!
Now, I like to make it because it is so easy to freeze and make a double or triple batch.
It's a great meal to give away.
It's also one of those recipes that people actually ask me for the recipe.

The ingredients are a little different than your typical lasagna recipe.
I think that's why everyone likes it so much.
All the ingredients, though, are just typical ones that you usually have in your fridge or pantry.

1 lb. ground beef
1 t. salt
dash of pepper
1 t. sugar
1 clove garlic crushed

Cook all these ingredients together until beef is crumbled and brown.

8 oz. canned tomatoes (stewed or diced; I often use my fresh, garden tomatoes. I don't cook my fresh tomatoes I just cut them up and use them as is. I guess on the amount, just as long as there is a good balance between meat and tomatoes.)
4 oz. tomato paste (cans are usually 6 oz. now)
1/2 can of tomato soup

Add the tomato ingredients to the meat mixture to combine.

6 oz. bag of extra wide  egg noodles
1 T. butter
1 c. sour cream
4 oz. cream cheese
3 green onions, chopped (I don't always use this ingredient, but I think it does taste better when you use it)
1/4 c. parmesan cheese
1/2. c. grated cheddar cheese

Cook noodles and drain. Stir in 1 T. butter. Beat cream cheese and sour cream until smooth, add onions and noodles.



Lay down meat mixture, first, in a 7 X 11 oblong dish. Then sprinkle half of the parmesan cheese on top of the meat mixture.

Put the noodle mixture on top of the meat mixture. Sprinkle remaining parmesan cheese on top.
Then put the grated cheese on top of this last layer.

Bake 1 hr. at 350.
This serves about 6.

Or instead of baking it you can put aluminum foil on top, and freeze it.
When frozen bake for about 2 hours at 350 or thaw and bake for the 1 hr at 350.
I bake this lasagna uncovered.
