Tomatoes, Anyone?

We are overrun with tomatoes. Last week I put tomatoes in every dinner item.
Here was our menu:
  • Pesto Pasta
  • Scrambled Eggs with chopped tomatoes
  • BLT's
  • Pasta Salad
  • Mexican Chicken Casserole (Very Good & Easy, if you leave a comment I will post recipe)
One of these years I will have to learn how to can & make salsa or spaghetti sauce. This is not the year. Maybe when all of my children are in school all day. In the mean time, I have learned from the wise ladies in my life; that you can chop up your tomatoes, put them in ziploc freezer bags, and use them all year long when a recipe calls for cooked/stewed tomatoes. You don't put frozen, then thawed tomatoes in your salad that would taste bad.

I puree the tomotoes, skins and all, and freeze them (2 cups per bag). Whenever a recipe calls for a can of diced tomotoes, I use them. You don't get the chunky tomatoes in your meal, but the flavor is delicious. I tried to can peaches this year. I got 7 jars done, and gave up. Maybe I'll try again in about 5 years.

Those look so good. Home-grown tomatoes are the only ones I can eat. I better figure out this gardening thing soon. So can I have the recipe?

Katie, I have something for you to try. Whenever I have a ton of tomatoes to use up I oven roast them. It's super easy, you can do a TON at a time, it makes your house smell like heaven, and it tastes amaaaazing! Here's the link:

Oh, and you can freeze them when they're done!
