When you need to eat Chili!

Here are a couple of recipes using a can of chili.  You won't win the chili cook-off contest, but you will feed your starving family.
They are the kind of recipes I love.
Open a can and dump. Stir and Warm.  So easy!

The first one I made up. It's called "Fake Homemade Chili in 2 min. Flat"
  • A can of your fav chili
  • 1/2 can of stewed tomatoes (drain if you want thick chili)
  • 1/2 can of corn (ditto the drain thing above)
  • 1/2 can of black beans (or any other bean you would like in your chili)
Stir all ingredients, then warm in the microwave or on your stovetop.
Add grated cheese and a dollop of sour cream; serve with your favorite taco chips.
If you think your family will do cartwheels over this meal, then do 2 cans of chili and and a whole can of the other ingredients. If you want to get really fancy add a lb. of ground beef. But that might be doing too much work. Then the recipe name would have to be changed to 10 min. Flat.

This next one is from my mom. They are very similar recipes.
Frito Casserole - So good so easy

Brown 1 lb. of ground beef, drain grease, then add sauted chopped up onion.
Add 1 can of your fav. chili
Add 1 can of stewed/diced tomatoes or an 8 oz. can of tom. sauce.
(I prefer the can of tomatoes, but sometimes kids freak out over cooked tomatoes; in that case the sauce is a better way to go.)
Season with 1 t. salt and 1/4 t. pepper

Place in a 7X11 pyrex dish. Cover with shredded cheese, then crush some Fritos chips on top.
Bake in a 350 oven for about a half hour.
You can also microwave this meal. Add cheese and chips after you have warmed in the microwave.
Leftovers are also better if you leave the cheese and chips off until you serve the meal.

Cornbread makes a great side to this meal!

***Special note almost all men love this casserole with huge amounts of salsa added to their helping on their plate.

These are recipes my family would LOVE, except for one grown Tongan man. He doesn't get the whole casserole thing. I'll try it anyway - thanks!
