Soup Gloroius Soup!

I love eating soup when the weather gets colder.
I love potato and cheesy soups.
I've been experimenting with a couple different versions.
Here's a recipe that I love:

Cheddar Cheese Soup:
(Betty Crocker's New Cookbook, Everything you need to know to cook)

2 T. margarine or butter
1 small onion, chopped (1/4 c.)
1 medium celery stalk, thinly sliced (1/2 c.) (I just diced mine.)
2 T. flour
1/4 t. pepper
1/4 t. ground mustard
1 c. milk
1 can (10.5 oz) chicken broth
2 c. cheddar cheese (8 oz)
Paprika, if desired

1. Melt margarine in a 2 qt sauce pan over medium heat
Cook onion and celery in margarine about 2 min. stirring occasionally, until tender.
(You can blend or food process the onion and celery if you prefer.)

2.  Stir in flour, pepper, and mustard.
Stir in milk and broth.
Heat to a boiling over medium heat, stirring constantly.
Boil and stir 1 minute.

3. Stir in cheese.
Heat over low heat, stirring occasionally, just until cheese is melted.
Sprinkle with paprika.
