Tomato Recipes

Mexican Chicken Casserole
1 (10 3/4 oz. size) can cream of chick soup
2 T. green chilies diced (I have never used in recipe)
1/4 t. instant minced onion (sometimes I omit this ingredient, my kids don't like onion flavor)
1/2 C. water
Mix above ingredients together.
2 lg, firm, ripe tomatoes (I use 3,4, or 5 because we are overrun with them)
Favorite Corn Chips
2 C. diced, cooked chicken or 2 cans (5 oz.) chicken
1 C. (4 oz.) shredded cheddar cheese
Chop or Slice your tomatoes.
In 2 qt. glass casserole dish layer bottom of dish with some of your corn chips. Cover bottom of dish with your chips. Don't use all your chips here, and no need to smash/crush them either.
Then add 1/2 of your chicken and tomatoes on top of this bottom layer of chips.
Pour 1/2 of soup mixture over chicken. Sprinkle about 3/4 of your cheese over the soup.
Then repeat layers, using the rest of your ingredients.
You can microwave this dish for about 5-10 min on high. Let sit for about 3-5 min.
Or bake at 350 for 10-15 min.
Floating Tacos ( A nice change from your typical taco dinner)
1 lb. ground beef
1 small onion
1 6 oz. can tom. paste
1 8 oz. can tom. sauce
3 8 oz. cans of water
2 cloves minced garlic
2 T. sugar
1 t. oregano
1 t. chili powder
1 t. salt
1 t. cumin
1 C. cooked rice ( I use minute rice)
1 Bag of Frito Scoop chips
Toppings
lettuce (shredded)
tomatoes(chopped)
cheese (shredded)
onion (chopped)
olive
avocados (chopped)
White Sauce
4 oz. cream cheese
1 C. mayo
1 C. buttermilk
1/2 t. salt
1/2 t. pepper
1/2 t. onion powder
1/2 t. parsley
1-2 cloves minced garlic
(I'm lazy if I don't have buttermilk or the recipe is taking too long to make.
I get some sour cream and mix it with a pack of dry ranch dressing mix)
Brown burger and onion. Add remaining ingredients except for rice. Simmer for 40 min.
Then add rice and warm through. Serve on bed of taco chips topped with white sauce (or sour cream mix) and toppings.
